The simple and easy-to-prepare breakfast granola recipe is kid friendly. Kids can do most steps themselves, and getting hands in the sticky oats and honey mixture makes it fun as well. Eat it with fresh fruit, milk, or yogurt.
Preheat the oven to 325 F. Line a large baking sheet with parchment paper. On a different, smaller baking sheet, or in a counter-top toaster oven, toast almonds (or nuts of choice) to desired toastiness. Set aside.
In a large bowl, toss the oats and coconut with the cinnamon and salt. Spread the mixture evenly onto the large prepared baking sheet.
In a medium bowl, stir together the oil, honey, brown sugar, and vanilla. Whisk until completely combined.
Pour the honey mixture over the oats mixture.
Use your hands to combine them: gather up some of the mixture in each hand and make a fist. Repeat until all of the oats are coated with the honey mixture. Leave a few clumps for texture if desired.
Bake for 10 minutes, then remove from the oven and use a spatula to lift and flip the granola. Bake for 5 more minutes, then remove from the oven and lift and flip again. Bake for 10 more minutes, then remove from the oven. Let it cool completely.
Sprinkle the raisins (or other dried fruit) and the toasted almonds (or other nuts) over the cooled granola.
Serve with milk, yogurt, or fresh fruit, or store in an airtight container for up to a week.
